I think most of the responses have everything covered. A stop at the Garden of the Gods, Colorado Springs etc. Get your mind off of "the perfect family trip" because nothing is perfect, but it will be incredible and while negatives will happen, you can use this trip to make changes and adjustments for so many more trips.
I can't finish my response w/out commenting on your change of careers and one reason for the change was summers off. My hope is that the other reasons you mentioned for changing careers has more to do with a desire and "calling" to teach. I was a teacher, a Middle School Assistant Principal and an Elementary School Principal aand we don't need teachers who are just wanting summers off. ALL kids deserve more than that. Sorry but this is a very sore spot for me and I had to rant.
