You are driving right past Goblin Valley in UT. At least stop for an hour or two. The kids will really enjoy climbing on the rocks. We did a 10 week CO/UT trip this fall and UT rt 12 had some of the most spectacular scenery of the entire trip. Would save miles as well between Bryce and Capital Reef.
