I tried to look back to see when this trip is scheduled, this year or next. I'm guessing this year. If so, I hope you have the reservations already made, as many of those places you list are getting pretty full by now.
I see a note about this trip being in July. I would very, very strongly discourage a trip to the bottom of the GC that time of year. We've done it in mid-April and although it was a comfortable 70 degrees for highs on the south rim, it was around 100 at the bottom. It is a long hike and no place to put your young family at risk.
I would also second the recommendation for the Buena Vista, Salida, Leadville area. Do a search here or check out this post I made a few years ago
