Texas in July is hot, so I wold recommend staying at a park with water access. If you want to stay in Austin proper, I would recommend McKinney Falls State Park. If your not tied to staying in town, I would recommend these in the following order:
Garner State Park
Jellystone Guadalupe River
Guadalupe River State Park
Pedernalas State Park
Inks Lake State Park
I haven't been to Dinosaur Valley yet, heading here next month so I can't comment on it. Weekends book up 3-4 months in advance.
