There's a thread running right now on N vs S rim and the consensus seems to be in favor of the North but there are plenty that disagree. But the question is not which has the better view but which is more efficient of his limited time and which has flatish hiking suitable for the kids and North Rim wins that hands down.
As for Sedona, I really don't know what you would do there for 3 weeks. There are a number of central AZ parks but like Arches they are likewise hotter than Hades in June.
