If you think this will be the only big family vacation I'd say to try to fit in as much as tolerable for you and the family.
I'm sure we've all tried to do that in a 2-week vacation and you have a month so I see no problem.
However, I'd recommend to save some extra 'play days' for your long drive back and do some kid things like an amusement park if that's what they'd like or just an extra couple days when you're getting close to home to relax by a pool, stream or lake - to decompress before the hectic work routine. Let the kids each choose one thing or stop on your return.
One thing not mentioned is bringing the dog with you on this long trip. Is there a relative or friend that you could ask to care for the dog while you're gone? For one thing, dogs aren't allowed on most trails in national parks and it would be a shame to skip these because of the dog or having one stay behind to care for the dog. You'd be gone for hours away from the RV and if your dog is a barker that could pose problems with neighbors or the park.
