OK one big thing to factor in your suggestions is this, the OP has a marginal vehicle: "2003 Excursion 7.3 PSD pulling a 2017 Keystone Sprinter, 39 feet long and approx. 9000 lbs" and it squats on the rear axle already in the flatlands. He should be fine so long as he avoids any long steep grades. That pretty much leaves out mountain CO. He needs to stick to the flatter routes by taking I-10 west and then working his way up thru southern NM and then going north in AZ to the four corners/ North Rim area.
And that brought something to mind for the OP. A great stop in southern NM is City of Rocks State Park just north of Deming NM. It's a good place to camp over night and I can absolutely promise that your kids will have a ball climbing over the building sized rocks. However do not go north into that part of NM after leaving there, it gets steep. Continue south into AZ. Website
