A couple of other things to consider with your bikes:
At the south rim of the Grand Canyon, take the Hermit Road Greenway trail out to Hermits rest. Take a couple of lightweight bike cables to lock your bikes and hike from there. Nice views of the canyon along the Greenway Trail.
At Zion, ride your bikes up the Pa'rus Trail and then continue up the Zion Canyon road (only open to the shuttle buses and bikes). You can stop more places and see things you can't from the bus. Again, take cable locks so you can do some of the short hikes.
