Outside of Telluride, the Galloping Goose trail is on an old railroad grade so not to steep or technical, but great views. The lift out of Telluride is free and takes you up to a variety of trails and parks. The trail along the river is great above, through, and below town. Again, not terribly technical but a very scenic ride, esp. below town. Telluride also has tubing through town. Used to be one could catch the free shuttle bus through town to get back up. Cooler water than Pagosa Springs though.
I think Silverton would be my choice for a rental. Bouncing can get to be a bit much for a full day of nothing but jeeping. But spend some time exploring the ghost towns or hiking among some of the flowers and you'll be amazed how fast the day will go. Bring jackets and rain gear just in case an afternoon shower goes by.
