From Amarillo you can take US 287 up to US 50 over to Pueblo to I-25 north to Colorado Springs. No mountains that way.
Raton Pass is really not much problem even for someone not experienced in mountain driving. Only really steep for the last mile or so near the top. I have towed over it going and coming from our annual trip to Colorado for the last 6 years towing my 35' 5er.
That Superduty 6.7 will tow it with no problem. And the engine braking in the tow/haul mode will make going down the other side a breeze. Good place to get your feet wet in mountain driving.
