50 years ago (!), we were fishing for sierra in Mazatlan on a panga. Sierra is kind of like bonito.
The guides would gut the fish and wrap them in foil with salsa and throw them directly onto a beach bonfire, turning the package often with big sticks.
After maybe fifteen minutes, open the package. Scoop up smoky steamed fish and slather it onto a fresh tortilla!! Wow.
