I think you are a bit early for going to Newfoundland. We were there one year in mid June with the hopes of doing some hiking. We could not access some trails due to snow and ice still being on the trails. A lot depends on the kind of winter they have. Also you might have trouble finding open campgrounds and some of the attractions might not be open in May.
