best route Eufaula to Sparta Tennessee avoiding Atlanta.

This should be I-65 to Nashville.

Take I-65 to TN SR840, a few miles south of Franklin. That will take you directly to I-40, then the exit for Sparta. That route will take you through Birmingham but avoid Nashville & Atlanta.
