Most of those roads are doable in RV's. Some people can't handle them, but if your confident in your driving most are fine. If you have questions about a specific route just ask on here and people will give you good info. Just be cautious of the people who never want to take their RV off the freeway.
Highway 1 along the coast in areas is restricted to 40' single vehicles and I have done it many times in my 35' mh and toad. Some of the mountain passes are best to avoid. For example Highway 108 and Highway 4 over the sierra's are not real RV friendly. But 88, 50, and 120 are all fine for RV's.
