I'm asking from those who have been through Canada, should one carry some Canadian currency, my concern is that running into a place that won't accept US dollars and don't accept credit or debt card. ...

Yes, make sure you insist that every merchant use these rates! And of course insist that you get US as change. However , if you do get Canadian as change, make sure that you make a comment on the 'pretty' colours of the bills, every merchant really appreciates that!
Banks are the only one that have to exchange money at the prevailing rates. All others can accept payment only in the local currency. Descereting currency is against the law.
The above applies to most of the world.
It's great that our friends in Canada are more flexible than most.
