I got here too late, but for others who might be considering such a choice:
I-20 will bring you through East Texas, the most beautiful part of the state and entirely different from anything on I-10. There are rolling hills, pine trees, and lakes with some really nice state parks and COE parks.
Tyler State Park
Daingerfield State Park
Caddo Lake State Park
Brushy Creek COE
Also I-20 makes a southern pass around Fort Worth and Dallas which allows traffic to keep moving at normal freeway speed. I don't think the same thing can be said about San Antonio and Houston, not to mention Beaumont and Lake Charles.
There is the option to take I-49 at Shreveport and "dive down" to I-10 and Layfayette, LA which gives one the best part of both worlds. We often do take the highway down from Jackson, MS to Mobile, but we do that because we also like that drive, not because it is the only way to go.
If one does go down I-49 from Shreveport, there is the option to visit Nachitoches.

And around Layfayette you are in true Cajun country.
