I don't think you will gain anything by going thru Dallas. There is construction on I-35E also. Taking I-635 around the east side of Dallas and back to I-35E would be about a 15 mile or so detour thru an area noted for heavy traffic. Then you would get back on I-35E heading south just in time to hit the new construction area started around Waxahachie.
I would just stay on I-35W and bear with the few miles of construction, doing it mid day or weekend to minimize traffic. Unless you were unfortunate enough to encounter a major accident, you would be thru the DFW area and on your way south well before you could do any bypass.
Don't know your starting point, but from OKC you could take I-44 to Wichita Falls, then US 281 down to US 84 over to Waco. Much less traffic, but don't know it would be any faster as you would have small towns, traffic lights, and lower speed limits.
