If you stay on the Interstates suggested, and stop for gas anyplace it is available once you are down to a half tank, you should not have problems finding gas. Also, most any place you stop for the night there will be gas stations, so top off in the morning.
People who have trouble finding fuel in the west are those who run down close to empty after passing the station 50 miles back, and the next one is 70 miles ahead. Didn't believe "last services for 100 miles" sign.
When traveling on the cheap, I find consistently low prices and adequate facilities at Motel 6 and Super 8, sometime Budget Inn and Econolodge franchises, but the first is less consistent quality, the latter sometimes high. These motels are co-located usually with clusters of gas stations, convenience stores and restaurants, which you may not find at CGs with cabins.
Route? I'm coming up with I-35 to I-70 to I-25 to I-80, then US-95 and Oregon 140. If you want to stay on Interstates, I-80 to Sacramento and I-5 into Medford.
I would use a more scenic route avoiding major cities, but you have a time budget and need to use the faster Interstate system.
