Day 7-14 (Aug 12-19): Camp at Fishing bridge and drive the truck around Yellowstone to see everything. Exact itinerary for our stay is still to be determined.

Don't think you are going to see everything in 7 days. You could stay a month and might see most of it. Just pick some sites, there are a number of geyser basins for example and spend enough time at each to see that area.
There are long drives between areas, first because of the distance, second the speed limits are low and finally you will find the roads blocked by gawkers every time a chipmunk stands up...heh. Probably too far to bike unless you are serious about biking.
Lake Yellowstone may be dangerously cold but maybe by August it will have warmed up. When I visited YNP many years ago some boy scouts overturned their canoe and tried to swim to shore but didn't make it because of the temp.
Jenny lake might be better for boating.
