If you're stopping for nights along the way, you may want to consider the Amtrak auto train. It basically cuts a night out of the trip, at least by my figuring (and for my traveling). You don't avoid the DC/Baltimore area, of course, since that's basically the northern terminus. It's also not a money-saving option.
I've sometimes taken I-26, I-77, and I-81 (presumably cutting across I-76 to get to NYC) in preference to I-95 when heading to or from Florida. That does avoid a lot of the worst of the cities and is, at least in areas, a fairly scenic route. I don't know if it's actually faster or not, but it seems nicer to me.
