I would favor I-80.
Plenty of rental car options in Jackson; parking a rig can be a problem and will depend on timing. either in town or at airport, you may have to walk a bit. less traffic at the airport location.
other than riding around the campgrounds, bikes will be of minimal use.
I stay at Colter Bay campground and get good Verizon with my external antenna and booster.
