I don't know hat vehicle you have. We spent 8 or 9 days in Escalante last year. I recommend that you drive as far down Hole-In-The-Rock road as you feel safe doing. You should easily make it to the Dancehall about 45 miles or so. You can walk up the backside of the Dancehall and that puts you maybe a 100 feet up with a good view of the area.
After that you want a good 4WD. And if you try for the Hole-in-the-rock get a good early start to beat the rain. It's about 70 miles or so from the highway, we never made it. Lots of very scenic photo opps on that road, especially early and late near sunset. It rained everyday near sunset for us tho and you don't want to be on those roads in a downpour.
We didn't think much of Peekaboo canyon. It's a long hot walk to get to the first slot canyon and another long hot walk to get to the next section. You definitely don't want to be out there in a storm in the canyons. But I'd try other canyons before doing that one.
We stayed at the Broken Bow CG. All of the CG are basically gravel lots with a few trees but this is the high desert.
Not on your itinerary, but Catheral Rocks road near Torrey (east of Capital Reef) had spectacular photo ops:
