we like 191 and have traveled it from Cortez several times.
Green River UT has a nice state park right in town, on the river.
At Flaming Gorge, we prefer Firefighters Memorial campground, water and dump there.
in WY, there is a nice little gov. campground, again on the Green River, about 20 miles northwest of Pinedale, water and dump and a good place for an overnight.
For West Yellowstone, we turn south to Alpine WY and then go west over to highway 20 in Idaho and north from there. There is another gov campground on the Snake river about 7 miles west of Alpine, water and dump and elec available there. Watch for Bald Eagles in that area.
A walmart in Rexburg if you want to stock up a little before getting into tourist town prices.
