We are interested in traveling Hwy 70 through Utah and wanted to see if other's have traveled that route and could provide some feedback re: the roads. We will be traveling in a class A 35 ft DP with a toad. Any concerns we should know about? Thanks.

Well, it would be a shame to stay on that interstate across Utah. There is so much to see in Utah, especially south of the interstate - many awesome national parks. I would recommend you don't drive the interstate although it's a good road as interstates go but you'd be missing a lot.
Good road but I think about punching these locations into your GPS;
Zion
Arches
Rt 12
Escalante
Kodachrome
Capital Reef
Goblins SP
Canyonlands
Arches
Moab
Rt 128
then into Colorado on I-70
With your Coach and Toad (Jeep?) you will be exposed to so much more than you would see on the interstate, still you will need a good deal of time as all these locations can require a week to really see and touch the beauty. Try to schedule the time when the heat is not extreme and enjoy the drive. as most of these roads are excellant.
Google the tunnel in Zion to learn about it, once you pass through it the landscape changes and you, will be rewarded with eye candy around almost every turn.
JMHO,
BOL,
We could do a whole lot more in Colorado but that is for another day,
