"Easiest" is always going to be subjective. However, in this case, this is likely the easiest route by most standards. There's no high mountain passes to go over, the highest point will be under 9000 feet east of Laramie WY, in a rather long climb out of the Laramie Valley up to the highest point on I-80. From that point east it will be all down hill...literally.

As mentioned prior, wind WILL be a factor. If you can get a good tail wind, it's not so bad, and this time of year, it's not likely you'll have a head wind heading eastbound. Most likely will be southerly winds, which can be a mixed blessing.
