Across to I-5 and return fast up I-5 (rather than retrace our route north on 101). We are not big hikers but would like time to stop, see, and enjoy. I would not want us to be rushed because we didn't plan enough time.
Is 7 days enough? Is 10 better?

10 days are always better.
For your 1st. trip I would skip Washington and make that another trip by itself.:
1. Go west on Hwy. 24 to Seaside, find a campground to use as a base to explore Astoria and surrounding areas. Be sure and stop for breakfast at Camp 18 restaurant:)
2. Then start traveling south taking in all the points of interest. Newport might be your 2nd RV Park home base.
3. Crescent City could be your 3rd. RV Prk home base. There are some nice RV Parks right down in the port area next to the ocean. From Cresent city you can start your trip home to Portland. You can drive from Cresent city to Portland in 1 day.
