Last fall and spring there were a number of threads asking about Oregon to Arizona drives.

Mt Shasta - Susanville - Reno - LV is one good option.

another is to cross the Cascades to US97, OR31 to Lakeview, US395 to Reno. A variant on that is Klamath Falls, CA139 SE.

Well you already did a Northern route so if it was me I would go South on I5 to Mt Shasta and take 89 then 44 36 into Susanville Ca then 395 into Reno. Catch I80 East to Fernley NV then alt 95 to 95 into Las Vegas. Suspect you can make it home from there. The drive as far as Susanville is pretty, after that just desert.
