If you want something really different, book a trip to Churchill and view the polar bears at Hudson Bay. You would park the RV in Winnipeg or Thompson (which is halfway between Churchill and Winnipeg), and stay in an inn at Churchill. The tour would let you visit country and see things that aren't possible in an RV as it's fairly remote. You would need to get information from Manitoba tourism folks on what the trip would entail. I agree that the Arrowhead RV park just a little south of Winnipeg is a great place to stay while you do all the stuff in town.
