I couldn't disagree more. Kid's enjoy things most when they are out of the car. They can experience the woods, the critters, the beach. Children really don't look much at scenery out of car windows when they are as young as the OP's.
Personally, I'd just head south from Anchorage to the Kenai. So much to do there that even a week will go by quickly. Perhaps a trip to Whittier to take the glacier cruise would be fun. Going through the long tunnel is an experience and the boat is fast.
