The park roads would be no problem for you. They are full of RVs.
My question would be: why 3 nights at Fishing Bridge and then 3 nights at West Yellowstone?
You might want to consider 3 nights at Colter Bay RV in Grand Teton National Park instead of West Yellowstone. The Tetons are right next door to Yellowstone and yes, you can use the good park roads to get to Colter Bay. The Tetons are all together different than Yellowstone and would give you a nice change.
The hiking is awesome and can be easy or difficult. Take a boat trip across Jenny Lake and walk to the waterfalls. Take a gentle raft trip down the Snake River and you just might see a moose in the water with you. The town of Jackson has a rodeo that's enjoyable and major grocery stores to replenish your pantry. Then you can leave the area by going through Jackson - good roads.
You won't be disappointed with some time in the Tetons.
