I think I would agree with the I-77 route. Between missing Asheville and the gorge, the extra distance isn't that bad. Plus, the climb on I-77 is pretty.
There is a nice county park in Bristol which may work well for your first night if you want to take the extra time to setup in an actual campground.

And yes, us Dads are more nervous than the kids. My oldest graduated 3 years ago, married and moved to Knoxville. I still get nervous when she hasn't "checked in" in a couple of days. We spend so much time protecting and worrying about them, it becomes a hard habit to break.
