Ive taken the section of I40 from Raleigh to OKC quite a few times. Like mentioned before, once you get past the cumberland plateau you're done with the mountains.
After that its just hilly on through nashville till around Dickson then it kinda tapers down till memphis.
When you cross the river into arkansas its flat for quite a while until you get out of the river valley then it goes back into random hills as you skirt the edge of the boston mountains/ozarks. On the oklahoma side of 40 its mostly rolling flat land
As for the roads, TN maintains their roads very well. Arkansas is decent enough. Oklahoma used to be absolutely horrible until they finally got around to repaving 40 in sections. My teeth would slappity slap slap rattle out of my head lol
