questions on I-40 going west from NC to OK
OK I have never been past Knoxville, TN going west on I-40 to Lawton, Oklahoma. My questions are: Once I am past the smokey mountains on I-40 in NC/TN are there more mountains to climb to get to OK?...

There are no mountains anything like going across the Appalachians. Nashville to Memphis is basically downhill with ups and downs crossing river valleys. Memphis to Little Rock is flat, crossing the Mississippi Delta plain. Little Rock to Fort Smith is somewhat hilly, but the road essentially follows the valley of the Arkansas River. To Oklahoma City is a climb, but very gradual, on the order of ten feet per mile.
You can get to Lawton on US-277 (leave I-44 at Newcastle) if you don't want to pay the toll, but add at least an hour to your driving time. I've done this all the way to the Red River, wanted to see what it was like once. It turned a 2 1/2 hour drive into a 4-hour drive.
