I've driven all those stretches within the past two years.
US-281 - best north/south route in the state in my opinion. You will make the best time on 281 from WF all the way to Johnson City
US-67/377 - very good road, light traffic
TX-16 - a good road, two lane most of the way. Goes through some small towns. You will make better time on 281, but enjoy the view better on 16.
Fuel will usually be a bit cheaper on 281 than 16.
