Edit: a big rule in New York and New England is to avoid roads called parkways. Almost without fail, they are not suitable for RVs, and most prohibit them.
The Garden State Parkway is one exception to this. The only issue is that some of the arched bridges have lower clearances in the right lane.

From there, I have no idea of the best way to get an RV onto Long Island; maybe I-278?
That's because there's no best way :( The most direct route is I-95 over the GW bridge and the Cross Bronx Expressway across the Throgs Neck Bridge to I-495 to the Long Island Expressway.
Edit: I cut the reply short this morning because I needed to get to work. (I thought I was retired.)
You have to pick your time to do the GW Bridge and the cross Bronx. Early (before 6 am) and Sunday mornings are probably the best. Propane is allowed only on the upper deck of the GWB and you need to pay attention to the signs to make sure you're in the correct lane to get on top. There are several lane restrictions using Jersey barriers and they're just the right height to take out your steps. Most RVers in the northeast avoid this route like the plague, but if you're going to LI, there's really no choice. Oh, I guess you could drive to New London CT and take the ferry across . If you're headed to the eastern end, I'd consider this.
