Good plan I think to go over this portion of the trip during the weekend, 125 miles can easily be done, less truck I would think and less chance to get a rock in the Windshield.
There's just as many haul trucks on the highway on a weekends as there are on a weekday. They don't plan having Sat/Sun off when they're doing a long haul from the south to Alaska. They just make the miles regardless of the day, until they reach their destination.
Although the construction is usually in pause mode on a weekend so you might not be held up waiting for a pilot car.
Weekends are busier with locals on the highway - in a hurry to get into Whitehorse for grocery shopping or some other chore.
I agree with Sue, there could be more trucks on the weekend. I used to have two - three trucks a week coming up the highway. I wanted the loads there (usually in Fbks) on Monday morning ready to go for the crews. The drivers don't get paid to sit out there on the side of the road and take the weekends off. Even if they're Canadian oil field truck drivers, they're working at least six days a week and usually seven days a week.
