route from Aubrey TX to Williston FL

Start late morning or mid day and it should not be too bad. You could go north from Aubrey to US 82 east to US 69, but that would be so far out of the way, you would be much faster on US 380 even with the traffic lights.
Take US 69 at Greenville south to I-20 just south of Lindale. Mostly 2 lane, but a good road with little traffic. Watch your speed in the small towns along the way. Then take I-20 east to Shreveport. From Shreveport I would probably take I-49 down to I-10 east and use I-12 to by pass New Orleans. But maybe someone can chime in with better options to get from I-20 to I-10 while bypassing cities.
Can't help with RV parks along the way.
