My friend BB is exactly right about the traffic, but maybe this will be your best route. I do have a suggestion about your first night, assuming that you really want to keep your drive around 3 hours.
You could stay on 380 as BB has suggested, but my alternate would be for you to stay straight east on I-30 at Greenville; turn off at Mt. Pleasant on TX 49 to Daingerfield, then come up US 259 to Ore City (where we live!) then take FM 450 to FM 726 to the dam at Lake 'o the Pines. There are two fine COE parks. The first you will come to by this route is Brushy Creek. That would be about 3 hours and 20 minutes depending on that traffic at the beginning.
From there you could drop on down to I-20. The best route would be FM 3001 to FM 1997 to the bypass around Marshall, TX to US 80 to intersection with I-20 between Scottsville and Waskom.
The only alternative within your desired ETE would be Hitchin Post RV near Hallsville, TX just off I-20. Almost the same time.
If you should decide to take the COE alternative, it would be nice to stay over a day and visit the historic town of Jefferson, TX, a short drive from Brushy Creek. If you do decide to come this way, let me know and maybe we can plan a visit.

Yes, we do like to stay under 3 hrs travel. More due to back issues and my older, ummmm, cat who does not like to travel!
