Texas interstates are mostly good.
Do NOT go through downtown Houston. I take Beltway 8 around, but that's a toll road and I have a toll pass. 610 on the north side of Houston is okay.
Do not go through San Antonio - a very confusing route with many left exits. I did - and it was the worst city experience I've had. And I live in the Dallas area. 410 seems to be the best route.
Visual appeal - that's tough.
By the time you get to Texas, you will be tired of coastal/ swamp land scenery - but that's it until you start getting to the forested areas. West of San Antonio is the Texas Hill country. Very nice - especially in the spring.
A bit farther west - it is miles and miles of miles and miles.
SFA State Park, something in the Kerrville/ Fredericksburg area, Davis Mountains SP will give you a good overview of three different types of Texas scenery.
There is of course the Gulf Coast and the High Plains also. You would have seen plenty of Gulf Coast by the time you get to Texas and will see plenty of high dry plains farther west.
I'm not really a 'big city' type person - so if that is of interest - Houston and San Antonio might be better for short stays.
The Riverwalk area of San Antonio is one of Texas best features - you just have to stay in a park close to the city to really enjoy it.
Others will have to talk about the drive west of Kerrville. I haven't driven it except in far west Texas since I use I-20 to get out past Midland.
