In New Mexico, Elephant Butte Reservoir and State Park is nice.
As other have mentioned, the trip across TX is long and boring. Unless you need to get to see something in Texas or visit southern California, I would go up to I-20 and across through Amarillo and Albuquerque and Flagstaff.
