Given the time you have I would drive down to Longview on I-5 and cut over to Astoria on US 30. Arrive late in the day and spend two nights at Fort Stevens SP or Cannon Beach RV. Spend the next full day exploring the north coast before departing early the next morning. Lots to see and do in this area.
Dawdle down the coast to Beverly Beach SP near Newport. Spend a night here and make sure to visit the Oregon Coast Aquarium. From there you must decide how many days you want to be in Disneyland and how much you want to drive each day. Going further down the coast is beautiful, but not super fast. One way to do it is to take your time on the way down and go straight up I-5 to return.
All of the state parks on the Oregon Coast are amazing if you choose to go all the way down the coast. Ashland can be a great stop in either direction. Camp at Emigrant Lake, a county park just out of town, and go see a play outside at night. There is a small water park for the kids near the campground.
