Don't worry, you'll be able to have a great trip in 14 days. No matter how long you budget for a trip, someone on this forum will ALWAYS say you don't have enough time. :B We live just south of you and have done that trip a couple of times, in less than 14 days. Here's what ours looks like:
We stay on I-5 South then cut over to Astoria to pick-up the coast. I think you definately want to do the coast south-bound, there are hundreds of pull-outs on the water side of the road, and if there's much traffic they'll be hard to get in and out of if you're northbound. We like to stop at the Lewis & Clark sites, the Tillamook cheese factory, the seal caves and a coulpe of aquariums along the coast. Oregon has some real jems of state parks with full hook-up RV sites, so there's seldom an issue with finding that sweet over-night spot, with reservations. We meander down the coast, moving to a different park every night but not driving very many miles each day, and stopping in lots of places. RV'ing is very popular along there, so virtually every attraction has RV compatible parking. You should plan an extra day at least at the Redwoods National Park.
Once down into California, I can't offer much on the differences between staying on Hghway 101 versus the Coastal Route 1, as we always stay on 101 because I've got family to see in Sacramento. It's not very scenic but moves along pretty quick. Someday we'll take Route 1, but I've read that it is very slow going.
You should quite easily be able to enjoy the heck out of the coast and still make it to Disneyland in 9 days. Two days at Disney, and 3 fairly easy days drive on I-5 will get you back home.
I'll footnote this by saying that my family has done many of these wandering, moving every day types of trips and we really love it and enjoy the driving. I'm sure many other people would not take to it as well.
Have a blast, I'm jealous already. We're thought about heading to Disneyland for spring break but didn't want to deal with the crowds there that time of year. Instead we're going to Astoria then up the Columbia River Gorge. My six-year old wants to follow in Lewis & Clark's footsteps.
