Early November is normally pretty nice weather in the eastern Sierra Nevada's. However, Storms are already hitting the higher elevations so you would need to watch the forecasts.
If you do take I-5 to Redding, I would continue on down the valley, no reason at that point to head up to Reno, IMHO
If the weather is good, I might take I-5 down to Mt Shasta, then 89, 44, 36, 395 to Reno. Then 80 to Fernley, then 50 to Fallon, then 95 to Las Vegas.
