We went up to New Brunswick in 2008 and stayed two nights at
Century Farm Campground. Nice owners, nice campground, right on the Bay of Fundy. We don't have a toad, so we drove our Class C over the covered bridges (I seem to remember there were two) so we could drive the Fundy Trail Parkway. When we were there the Fundy Trail wasn't a through road, but we were told that there were plans to extend it.
The sea caves in St Martins were shallow caves accessible as the tide goes out by walking across a shallow stream.

Fundy National Park was also great, but you will definitely need to use the toad there as parking at trail heads, etc. was limited.
IMO the best place to experience the Fundy tides is at
Hopewell Rocks. Plan to spend several hours there to experience the tidal range, which is amazing.
