It will be tight and close, but you can do this. I just hope that the cab is more comfortable than any truck I ever owned.
First, assign a front seat passenger to be navigator. This can take a lot of the load off the driver. While I have confidence that one spouse can be that while the other drives, if you can pass this responsibility off to a kid, it can be a serious help and a learning experience. Have a back seat person be the log keeper on a tablet. This will be rewarding once things start happening and a wonderful source of memories.
If your kids are anything like my grands, they have tablets that they can play on or read (or log), these will need an underway power supply. That should be easy enough.
