I too would be leery of the heat in Utah at that time of year. I'd consider scaling back time spent there. You could use the time gained to go north to the Black Hills on your way home. You could easily spend a week there. There are all kinds of activities for the family to do. In addition there are some great water parks at the Wisconsin Dells. Should you go this route I would advise going around Chicago, not through it. Have a fun and safe trip!
