Keep in mind that to avoid extreme heat in Mexico in summer, you need to be at pretty high elevations. Some people don't feel well at places higher than 1,000ft.
Lake Chapala... Check weather stats for the last summer. I recall a nice gringo-ish web portal for Chapala, with a big banner/link at the top: "Days without rain ...(a low number like 3, 4)".
