Since you will be in West Yellowstone, the quickest and easiest way will be the longer way of taking 191 back up to I90 then I25 down to I80. 191 to I90 is mostly down hill and you go around most of the other ridges so relatively smooth.
While going through Yellowstone, Tetons, and 287 down to I80, it is only 100 miles shorter and will not save any time. Could cost time depending on how many buffalo jams you hit going through Yellowstone.
However, the route through Yellowstone and Grand Tetons would be prettier.
Comes down to easier longer drive via interstate or seeing some more country while traveling nice non-interstate roads.
