I don't want to dissuade you from running the two lane roads out west. That's the roads I'd take but I think the days of 18 wheelers running 70 and 80 miles an hour are long past. There has been an awareness program that the sweet spot between eating up the miles and not burning too much fuel is around 62 or 63 miles an hour and many of them run right there. It's only the Outlaws running at high speed these days.
My only problem with running some interstates is the extremely heavy truck traffic (mostly back east) on some of them no matter what speed they are running but other than that I don't mind them at all.
Maybe run some two lane roads till you get farther west and then pick up an interstate if you so desire.
