We take the interstates most of the time on long trips as well, but one of our best trips ever was coming home from the Black Hills in SD to Middle Georgia where we were on the interstate for about 20 miles to cross the Mississippi River. We got to see a lot of fantastic things that would have been missed on the interstate. We use Microsoft Trips and Streets to plan a lot of our routes and it would work well for planning a trip to avoid the interstates. As said already interstates would probably work best through the mountains.
